If the plates on a homemade leyden jar are away from the glass a little bit will it still work?
or does it actually have to be close to the glass

The closer the foil layers are to one another, the better it will work. You might try putting a few dabs of epoxy glue on the foil to hold it in place; the glass will insulate the layers from one another.

Yes. The jar (glass) is what is called a “dielectric” (an insulator) and only serves to keep the leaves isolated from outside electrons, except through the rod.
