Cooking on the “new” glass top stove?

I always prided myself on being an excellent cook;(I actually do catering) I have had the occasion to cook on 2 different glass-top stoves and have found them to be extremely hot & burn everything – also – the oven is a very dry hot heat that manages to burn and dry out the food being cooked. even tho I compensate by lowering the degrees it is to cook at. My daughters who are also excellent cooks agree with me;they too have had the same experience. I have all the best pots and pans that are flat and fit properly on the glass top. Am I the only one who has noticed this problem with the glass-topped stove? Thanx! Frustrated Cook
